The Rainbow Birthday Cake

This cake was so much fun to make! It wasn't as hard as I was expecting it to be either (thankfully). It was so bright and colorful it just put a smile on your face with every bite you took! Finally, I feel a tiny bit accomplished in something I have done! Woot!

Graduation, Prom, Mother's Day

This post has taken me a while but better late then never!
My brother Derik graduated from SLCC's nursing Friday! We did a little celebratory dinner for him Thursday night and it was great! I made cupcakes which looked like a 3 year old frosted them (I forgot all my piping tools at home so I used a ziploc baggie. Not nearly as good.)

(That's what we got him for his graduation.)

His graduation was Friday night and it was an exciting night for him!

Saturday my lovely niece Ashlie went to a dance for Roy High and asked me to do her make up. She looked so dang gorgeous! She belonged on the red carpet if you ask me!

So dang gorgeous! I found myself wishing I looked like her!!

Mother's Day was nice. Brandon made me a egg burrito with salsa and brought it to me in bed. It was delicious! He also gave me a very sweet card that said "Queen for a day"! I think I do get that way when its Mother's Day. I expect to be treated great that one day! lol

We went to church and I got to sub in nursery for one of my friends in my ward. It was actually pretty fun. I would have had to stay in there the whole time anyway since Sawyer won't let me leave without puking on someone so it wasn't bad. I had about 4 kids trying to sit on my lap at different times! Kids are so dang amazing! So trusting! And a good judge of character if I do say so myself! :) Sawyer wasn't real thrilled with the kids sitting on his mommas lap so he tried to push them off in a sneaky sly way and then with one little girl he just sat on her til she moved! I just sat there wondering how he was going to deal with a sibling when he gets one. It'll be interesting that's for sure!

After church we headed to my grandparents house for dinner so I could spend time with my mom and grandma. We ate a delicious turkey dinner! Made me a little sleepy though! I took Sawyer out in their back yard to swing and then we just played around. I chased him and we played Ring around the Rosie's. He loved the fall down part! Cute little stink.

We headed to Brandon's parents to visit with Kelly. Danielle and her kids were there so we got to spend a little time visiting with them too which was nice. I didn't end up getting home until around 8:30 pm. It seemed like such a busy day but it was great! I love being a mommy and I love my mommy, my mother-in-law and my step-mom! I am so blessed to have each of them in my life! I am so blessed to be able to be a mommy too. I love it! Nothing in my life is more rewarding!

Yet Another Post Today

I have posted a lot today I know. I had to post these cause I am very proud of them. I made cinnamon rolls from scratch today! They took forever to rise and whatnot but the end result was wonderful! They turned out really good and so wonderful right out of the oven!

I admit they aren't the prettiest but they tasted fantastic! I will just have to make them often til I perfect the look of them!

Cooking



Last night, Tia, Liz, and I decided to do a little baking. We made Triple citrus cupcakes {from the Martha Stewart cupcake book} and they were sooo divine! They were so fresh and had a little sour kick to them. We also decided to make some Peanut Butter and chocolate pretzels! Those were quite fun to make and very delicious too!

Sad Accident and Baking

We had a little bit of an accident today. I bought Sawyer some new pants over the weekend but he is so darn skinny they fall down to his ankles a lot. My mom was trying to pull them up but could only do it with her one hand since her other is in a sling. She pulled on the pants and he face planted on the kitchen floor. I thought he had just hit his head so I rushed over to him and started looking for a goose-egg and then I saw that his mouth was bleeding very bad. I kinda turned into momma bear when I saw all the blood. I was worried he had bit his tongue {since he always has that thing sticking out} or he had knocked a tooth loose, or bit through his lip. Thankfully, all he did was get a little slice in his upper lip and a goose-egg on his head. It was the saddest thing ever. I hate when kids get hurt. It breaks your heart.


Yesterday, I was in a baking mood so for breakfast I made German Pancakes which turned out beautifully....
Then I decided to make brownies and a new cake....

This delicious looking cake is called the Berry-Glazed Chocolate Cake. Here is how to make it...

Ingredients:

1 package devil's food cake mix

1 package instant chocolate pudding

4 eggs

3/4 cup water

1/2 cup apple juice

1/2 cup canola oil

1 teaspoon rum extract

1 cup semisweet chocolate chips

Raspberry Glaze:

1/4 cup seedless raspberry jam

2 tablespoons apple juice

1/2 teaspoon rum extract

Chocolate Icing:

2 tablespoons baking cocoa

1/4 cup heavy whipping cream

2 tablespoons butter, melted

1 cup confectioners' sugar

1 teaspoon vanilla extract

Make it:

1-In a large bowl, combine the first 7 ingredients' beat on low speed for 30 seconds. Beat on medium for 2 minutes. Stir in chocolate chips.

2-Pour into a greased and floured 10-in fluted tube pan. Bake at 350 degrees for 45-50 minutes or until toothpick comes out clean. Cool for 10 minutes before removing from pan.

3-In a small saucepan. combine the glaze ingredients. Cook and stir over low heat until smooth. Brush over cake. Let stand 10 minutes or until set.

4-Place the cocoa in a small saucepan. Stir in cream and butter until smooth. Cook and stir over low heat for 2 minutes or until thickened. Remove from heat; stir in confectioners' sugar and vanilla until smooth. Cool slightly; drizzle over cake. Let stand until set then serve.

It was a fun cake to make and it was tasty! Very rich tho.
